Healthy Banana Bread Recipe - Paleo/GAPS/Gluten Free
This delicious, healthy banana bread is sooo easy, quick and very satisfying for those like us ( on a natural cavity cure and prevention diet) or any grain free/gluten free Paleo/GAPS kind of diet. This also works for vegetarians or Weston Price types looking to avoid phytic acid and is sugar free.

I actually prefer to cook this in a round pan, rather than the bread pan for some reason, not sure why, perhaps because to me this is like a special dessert.
Start by preheating the oven to 350F and buttering the baking dish. I use organic, grass fed butter, or organic, cold pressed coconut oil. This is such a simple recipe that I make regularly, so I will show you in words and photos
RECIPE FOR PALEO BANANA BREAD
4/5 Bananas ( depending on size)
4 Pastured Eggs
4 Tablespoons Organic Coconut Oil
1/2 Cup Coconut Flour
1 Tablespoon Organic Cinnamon Powder
1 Tsp. Baking Soda
1 Tsp. Baking Powder ( or 1/2 Tsp. Baking Soda and 1/2 Tsp. Apple Cider Vinegar)
Pinch of Celtic Sea Salt
Preheat oven to 350 F
Combine bananas, eggs, coconut oil in a blender and mix well
Then add coconut flour, cinnamon, baking powder, baking soda and mix well
Put in oven and bake for about 50 minutes
I love that this can be made in a blender
Just throw the bananas and eggs in your blender
Add coconut oil and blend
That takes about 3 seconds
Then add the other ingredients
Pile them on top and mix again
Then simply pour from blender into your greased pie pan
And put it in the oven
It will rise quickly
But is usually a dark brown color when done
I like to combine it with my homemade paleo ice cream on the weekends as a treat, but hubs likes it every day as a snack or for breakfast with his raw goats milk. This works with green bananas ( resistant starch), regular or extra ripe.
This banana bread is not super sweet, but since we are careful to restrict fructose and eat no grains or sugar these days, limited raw unheated honey is the only sweetener we use. Rather than ruining the honey benefits by cooking it in the recipe, if we are in the mood for something super sweet, we drizzle it with the raw honey and might add some grassfed butter or goat cheese for variety.
Mostly though, we just eat it plain and love it, fresh out of the oven!
