For shopping, go downtown, but head a couple blocks away from the waterfront. The stores here are much more willing to haggle and often sell more authentic goods. Bien Raices is an eclectic little shop where you can buy wonderful handcrafted goods. Miguel y Hijon's shell artwork shop on Calle 5 is pretty amazing, something no artist or collector should miss seeing. There's a little locally run cafe called Especias that's got good prices and, often, live guitar music. More
Howth is about nine miles outside of Dublin along the coastline. You can go for a walk along the scenic cliffs and explore ancient ruins. Wicklow is about an hour south of Dublin and is absolutely gorgeous. It's nicknamed 'the garden of ireland.' There are lots hillsides to explore with hiking trails overlooking picturesque lochs. Both make for great day trips from Dublin. More
If you're travelling to New Haven with your dog, I recommend taking a day and going over to East Rock Park. This park is huge, with plenty of room for you and your dog to explore. More

Fisherman's Wharf is a huge tourist trap, but worth visiting at least once. Don't go on a weekend if you can possibly avoid it, and don't stay in the immediate area. You can find much cheaper hotels only a few blocks away. I'd recommend heading toward the North Beach area. It's like a charming Little Italy with some great restaurants and candy stores, much less touristy than the Wharf. More
Golden Spike National Historic Site in Promontory, Utah. It's the site where the two pieces of the transcontinental railroad came together. They have a little museum, replicas of two steam engines, and you can hike trails along the old railroad cuts. More

You'll have no trouble finding vegan and vegan-friendly place to eat in SF. For me, the best vegan restaurant in SF is Herbivore, down on Divisadero. They do breakfast, lunch, and dinner and are reasonably priced. I totally hate it when restaurants charge more for vegan options, don't you? Another place to try (If you're feeling fancy) is Millenium, a super high-end restaurant that specializes in vegetarian and vegan haute cuisine. Heaven on earth. More
